Breakfast


In response to COVID-19, we changed our breakfast service for the 2020 Season. In order to support optimum “social distancing” and “best practices” protection for all, we no longer serve our famous full breakfast in our dining room. Times change and thus…so do we. We always want to be sure that our guests have morning dining options, so we have made the following changes:


Breakfast Delivered to Your Room

Breakfast Pick-Up!

$17.50 per person

The perfect way to start your day. Our same great breakfasts that we have always served, both delicious and nutritious, are now available for either delivery to your door or pick-up service!

Delivery Service:

A steamy, hot carafe of Summer Creek’s Killer Coffee and your morning breakfast are now delivered on tiptoe just outside your door without knocking.

Delivered between 7:00-8:00AM

Pick-up Service:

If weather permits and you prefer to have breakfast on the patio, you may request pick-up service. We will have your breakfast tray ready for pick-up at the guest kitchen so that you may take your tray to the patio and enjoy eating next to the waterfall.

Trays will be ready for pick up 7:30-8:00 AM.

BLUEBERRY COFFEE CAKE MUFFINS


Ingredients

1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup butter melted and cooled slightly
1 egg, lightly beaten
2/3 cup milk
1 1/2 cups fresh blueberries (about 1 pint)

For the streusel topping

1/2 cup sugar
1/4 cup all-purpose flour
1/4 cup butter, cubed
2 teaspoons ground cinnamon

Directions Preheat oven to 400F. Grease muffin cups or line with muffin liners.
Combine flour, sugar, salt and baking powder in one bowl. In another small bowl, combine melted butter, milk and egg. Mix this with flour mixture. Fold in blueberries.
Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

To make streusel topping: Mix together sugar, flour, butter, and cinnamon. Mix with a fork until it looks like coarse sand.

Sprinkle over muffins before baking. Bake for 20 to 25 minutes in the preheated oven, or until a toothpick comes out clean and they are a golden brown.
